BALINEWS.ID – Cliff at CANNA has officially unveiled Anatomy of the Archipelago, a groundbreaking tapas and cocktail journey that reimagines Indonesia’s history and spirit through the lens of mixology and gastronomy. This innovative promotion, inspired by the anatomy of plants, presents a five-part narrative that blends cultural storytelling with modern dining artistry.
The concept is the brainchild of award-winning mixologist Agus Sastrawan and Executive Chef Surya, who together crafted an immersive dining experience designed to strengthen Cliff’s position as a leading casual fine-dining destination in Bali.
At the heart of Anatomy of the Archipelago is a creative interpretation of the plant life cycle — from root to fruit — translated into cocktails and tapas that embody Indonesia’s timeless heritage and diverse flavors. Each cocktail, prepared with locally sourced ingredients, is carefully paired with a tapas dish that bridges tradition and innovation.
Highlights of the Journey Include:
- The Root (Akar): The Revival cocktail, featuring turmeric and local pineapple, pays homage to Indonesia’s deep-rooted heritage. It is paired with the Beef Rendang Cone, offering earthy, traditional flavors in a contemporary presentation.
- The Stem (Batang): The Native Wood cocktail, inspired by rare Mesoyi wood from Papua, represents strength and connection. Served in a vessel resembling a wooden stem, it underscores the deep ties between culture and nature.
- The Leaf (Daun): The Garden Harmony cocktail, made with fresh Indonesian basil and moringa, symbolizes shelter and growth. It is paired with Beef Satay Rembiga from Lombok, a bold and spicy dish that balances zest and heat.
- The Flower (Bunga): The elegant Fragrance cocktail, a floral twist on a martini infused with Indonesian blossoms like frangipani and kenanga, is paired with Tongseng Kambing Tacos, creating a refined blend of spice and delicacy.
- The Fruit (Buah): The journey culminates with One Step Paloma, a vibrant cocktail featuring pomelo and Kintamani orange, celebrating joy, life, and togetherness.
“Our tapas are designed to be the perfect counterpoint to the cocktails,” explained Chef Surya. “It’s a culinary echo of the journey from root to fruit — each dish pays tribute to Indonesia’s heritage while embracing innovation.”
