UBUD, BALINEWS.ID – Following his recent Two Knives (World-Class) honour at The Best Chef Awards 2025 in Milan, Chef Syrco Bakker unveils Pure BASÈ, a new five-course menu that brings the celebrated Syrco BASÈ experience to a broader audience. Designed around accessibility and authenticity, the menu stays true to the restaurant’s core values of Traceability, Nature, and Transparency, offering a refined yet grounded journey through Indonesia’s diverse ingredients and traditions.
Priced at IDR 850,000++, Pure BASÈ highlights Indonesia’s produce, people, and landscapes through an elevated dining experience that remains approachable and inclusive. Guests begin their culinary journey in the restaurant’s lush garden, where they learn about the cultivation of local ingredients, followed by a visit to the Aging Room that showcases Syrco BASÈ’s unique approach to sourcing and collaboration with local artisans and farmers.
“Receiving this recognition alongside peers I deeply respect is truly humbling,” said Chef Syrco Bakker. “It strengthens our purpose here in Bali, to create food that is meaningful yet accessible, and to show that refinement and simplicity can coexist when we honour the people and produce of Indonesia.”
The Pure BASÈ menu features dishes that reflect balance, craft, and cultural respect. Highlights include Savoy Cabbage with green chili koshi and lime, Tomato with almond and garden herbs, Duck Betutu with taro rosti and chives, and Nasi Ulam, a fragrant rice dish celebrating Indonesia’s culinary heritage.
Additional creations such as Sepia with black garlic and lemon kosho, and Hamachi with watermelon and coconut, showcase the restaurant’s strong connection to local farmers, fishers, and artisans. The meal concludes with a choice between two desserts: a modern take on Kolak (a classic coconut and banana dessert) or Milk Chocolate with mulberry and caramel.
“After more than a year and a half of learning and refining, we wanted to make Syrco BASÈ more accessible to a wider audience without losing our integrity,” added Chef Syrco. “Pure BASÈ is about redefining fine dining, making it honest, inclusive, and deeply connected to the land and culture that inspire it.”
The Two Knives (World-Class) distinction at The Best Chef Awards 2025 further solidifies Chef Syrco’s global standing.
