BALINEWS.ID – Seasalt Seminyak and WAATU are set to present an exclusive beachfront dining collaboration through Seasalt & Friends Chapter 11, a culinary experience that blends fire-driven cooking techniques with refined coastal flavors.
Held at Alila Seminyak on May 23, 2026, the special event will run from 5 PM to 10 PM, offering guests a curated evening inspired by craftsmanship, seasonality, and Bali’s coastal atmosphere.
The latest edition of the ongoing Seasalt & Friends series brings together the culinary philosophies of Chef Lachlan Budd from WAATU and Chef Hazwan Hamdan from Alila Seminyak. Through a carefully designed menu, both chefs combine modern techniques with ingredient-driven cooking, creating dishes that emphasize balance, texture, and expressive flavors.
The collaboration highlights the synergy between Seasalt’s signature coastal dining identity and WAATU’s contemporary approach to flame-cooked cuisine. Guests will be invited to experience a four-course set menu alongside a selection of à la carte offerings, allowing for a personalized exploration of the partnership.

The culinary journey begins with Beef Tartare, elevated by kimchi salt that introduces a subtle fermented complexity to the dish. Guests will then be served Tuna Usuzukuri paired with bonito cream, radish, and sake, delivering a delicate and clean flavor profile with a refined finish.
For the main course, BBQ Mahi Mahi is complemented by leeks, sake glaze, and wakame, combining gentle smokiness with fresh coastal elements. The dining experience concludes with Bali Cocoa dessert featuring coconut and salted milk caramel, creating a rich yet balanced finale inspired by local ingredients.
