BALINEWS.ID – Seasalt at Alila Seminyak hosted an exclusive collaboration with Executive Chef Tyson Gee from Park Hyatt Sydney. This became a remarkable cross-continental culinary experience in Seminyak.
Held from April 10 to 12, 2026, the “Seasalt & Friends – Chapter 10” series brought together two coastal dining powerhouses, blending Bali’s laid-back seaside charm with Sydney’s refined harbour dining culture.
The three-day culinary showcase was designed as an immersive exchange, highlighting a shared philosophy of ingredient-driven cuisine, sustainability, and modern techniques. Seasalt’s signature concept centered on responsibly sourced seafood, Japanese-inspired techniques, and a zero-waste philosophy comes together seamlessly with Chef Tyson Gee’s globally influenced culinary style shaped by his experience across Canada, Australia, Thailand, and Malaysia.

The event kicked off with “Sunset Hour” on April 10 and 11, offering curated tastings paired with champagne and wine, all set against Seminyak’s iconic golden hour. Guests were treated to a sensory dining experience enhanced by live entertainment and oceanfront views.
Evening dinners elevated the experience further, featuring standout dishes such as cured yellowtail with coconut citrus and belimbing, chargrilled calamari with smoked bacon XO, and braised clams with smoked soy and salted plum togarashi. The menu reflected a seamless fusion of flavors, combining Sydney’s polished culinary techniques with Bali’s relaxed coastal spirit.
The collaboration concluded on April 12 with a special edition of Seasalt’s Sunday Coastal Brunch. Chef Tyson Gee introduced his signature creations into the restaurant’s interactive dining format, showcasing dishes like crisp tuna tartelette with dashi jelly, blue crab omelette with chili oil and herbs, and river prawn with chili jam and sauce américaine. A single-origin chocolate s’more added a playful nod to his Canadian roots.
These dishes were complemented by Seasalt’s beloved signatures, including Wagyu short rib with Kalimantan black pepper, seafood tempura, and laksa with octopus and vermicelli, resulting in a menu that celebrated both innovation and seasonality.

The Sunset Hour and Dinner experiences ran from 5 PM to 10 PM on April 10 and 11, while the Sunday Coastal Brunch took place on April 12 from 12 PM to 4 PM, priced at IDR 650,000++ per person.
